Fiery Chili Garlic Paste Recipe from New Delhi

This is so easy and you can make a fantastic chili paste that is healthy and free of any artificial ingredients. Most store bought brands have preservatives and chemicals. This one is just chili paste and nothing else.

This is a fiery chili paste, which was shared with me from my friends in New Delhi. The same friends that shared the wonderful Tandoori Chicken recipe. It is wonderful and a must for chili and garlic lovers.

What’s the funny story about this recipe?

Since I enjoyed this chili paste so much, my friends insisted that I take some home. Since I need to pack it in my luggage and the sealed containers were wrapped I thought everything would be fine. I was very wrong, due to the altitude of the plane and the pressurization, all of the seals on the jars failed and the chili paste ended up all over my clothes in my checked luggage. Needless to say when I got home, many of those clothes needed to be thrown away. Lesson learned.

Ingredients:
 
1 lb. Red Bullet Chilies (Ripe jalapenos), or other hot red chili
2.5  oz. fresh Garlic cloves, peeled and crushed
Juice of two Lemons
2 Tbsp. of White Vinegar
1 tsp Salt
1tsp Sugar – Optional
 
Preparation:
 
Process everything together in a food processor until you have a coarse paste. Transfer to a clean glass jar and refrigerate. The flavor improves after a few days and continues to develop for about a week. For best quality, use within two weeks or freeze for longer storage.
