Authentic Thai Minced Shrimp and Pork Salad (Lon Kung Moo Sub)

Gai Larb- The Classic Thai Chicken Salad

Also known as Larb Gai, this is one of Thailand’s classic dishes. Unlike many stir-fries, it uses no oil and comes together in just a few minutes. The combination of fresh herbs, lime juice, fish sauce, and toasted rice powder in Larb Gai gives it a wonderful balance of bright, fresh flavors and a unique crunch.

Arugula Salad with Blue Cheese, Figs and Pecans

This is a fantastic salad to start off a special meal. It is hearty in flavor, so make sure to follow it with something dramatic, or include it as part of a grilled meal.

Even better, make a lot, add some bread and a nice bottle of Johannesburg Riesling and make it into a meal.

Healthy Salad Recipe: Arugula, Strawberries, and Blue Cheese

Healthy BBQ Side: Mango Corn Black Bean Salad

This Mango Corn Black Bean salad is wonderful and really great as a side dish for a picnic or a BBQ. The refreshing lime juice dressing really works well and the complete lack of fat was a wonderful side benefit. I’m always willing to cut fat as long as it doesn’t cut flavor.
