Sometimes it’s nice to have a dish that allows you to clean out the fridge and use up the bits and pieces. Having a one pan meal is always an advantage for easy clean up
This recipe is perfect for that, as you can substitute any root vegetable and change the herbs by whatever’s around. I’ll share my recipe here, but feel free to experiment.

This enchilada pie is a fun dish to prepare and it’s great for kids. It’s more Tex Mex, than true Mexican, but it’s tasty, hearty, healthy. I have made a vegetarian’s version here, but you can certainly add ground meat if you want.

This is a dish that I first tried in Sweden at a traditional Swedish Christmas table. Leading up to Christmas, restaurants and homes all over Sweden create these amazing tables filled with food of every description; however, this is one dish that you will find on almost every one. I enjoyed it so much that I asked for the recipe and my host graciously offered her personal recipe, which had been passed down through her grandmother.
