This is very easy to prepare and incredibly tasty. It’s rich, filling and perfect for a picnic or BBQ. It’s rich and filling and wonderfully sweet.
In a clinch, you can skip the time in the refrigerator, but it does improve the final result, if you have the time to spare.

This banana bread happens to be completely dairy-free and egg-free, which also makes it vegan, but that really wasn’t the point when I developed it. I wanted a rich, deeply flavored banana bread that didn’t rely on butter or eggs. The combination of very ripe bananas, brown sugar and maple syrup gives it an almost caramel-like flavor as it bakes.
For people who are lactose intolerant, baking can be a challenge, but this is seriously good and you’ll never miss the dairy or eggs.
